Description

Soft, buttery meltaway cookies bursting with strawberry and lemon flavor, finished with a light citrus glaze.


Ingredients

  • ½ cup powdered sugar
  • 1 ¾ cups all-purpose flour
  • ¼ cup cornstarch
  • ¼ tsp salt
  • 2 tbsp freeze-dried strawberry powder
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp lemon juice (for glaze)

Instructions

  1. Beat butter and powdered sugar until smooth and fluffy.
  2. Mix in strawberry powder, lemon juice, zest, and vanilla.
  3. Stir in flour, cornstarch, and salt until dough forms.
  4. Roll into small balls and flatten slightly.
  5. Refrigerate for 25 minutes.
  6. Bake at 325°F (160°C) for 12–15 minutes.
  7. Drizzle lemon glaze after cooling.
