Description

A warm and cozy pineapple upside-down cake infused with aromatic spices and topped with caramelized pineapple rings.


Ingredients

  • 1 can pineapple rings
  • ½ cup brown sugar
  • ¼ cup butter
  • Maraschino cherries (optional)
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ cup butter
  • 2 eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp cloves

Instructions

  1. Melt butter and brown sugar in a pan. Arrange pineapple slices and cherries.
  2. Cream butter and sugar, then add eggs, milk, and vanilla. Mix in flour and spices.
  3. Pour batter over pineapple layer.
  4. Bake at 350°F (175°C) for 35–40 minutes.
  5. Let cool slightly, then invert onto a plate.

Notes

Allow the cake to cool slightly before flipping to prevent it from breaking and to keep the topping intact.
