Dry Ingredients:
- 1 ¾ cups gluten-free 1:1 baking flour (Bob’s Red Mill or King Arthur)
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ground ginger
Wet Ingredients:
- ½ cup unsalted butter, softened
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- ¾ cup pumpkin purée (not pumpkin pie filling)
- 1 large egg
Optional Add-Ins:
- ½ cup white chocolate chips or chopped pecans
- Pinch of cloves for extra spice
Instructions
- Step 1 – Preheat & Prep: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Step 2 – Mix Dry Ingredients: In a bowl, whisk together gluten-free flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
- Step 3 – Cream Butter & Sugars: In another bowl, beat butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy.
- Step 4 – Add Pumpkin & Egg: Mix in pumpkin purée, egg, and vanilla extract until smooth and well combined.
- Step 5 – Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing for soft cookies.
- Step 6 – Scoop & Bake: Drop spoonfuls of dough onto your baking sheet. Flatten slightly for even baking. Bake 12–14 minutes, until edges are set but centers look soft.
- Step 7 – Cool & Enjoy: Cool cookies on a wire rack. They’ll firm up as they rest — staying perfectly soft and chewy.
