- 1 lb large shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
- Tortillas, for serving
Instructions
- Preheat oven to 450°F (230°C) and line a sheet pan with parchment paper.
- In a large bowl, toss shrimp, bell peppers, and red onion with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper.
- Spread the mixture evenly on the prepared sheet pan.
- Roast for 8–10 minutes, until shrimp are pink and cooked through.
- Remove from oven and squeeze fresh lime juice over the top.
- Garnish with chopped cilantro and serve immediately with warm tortillas.
Notes
You can substitute shrimp with chicken or tofu for variation. Add avocado slices or sour cream for a creamy finish.
