Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 1/2 tsp fine sea salt
  • 1/2 cup cold unsalted butter
  • 4 to 5 tbsp ice water
  • 3 cups fresh mulberries
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • 1 egg
  • 1 tbsp turbinado sugar

Instructions

  1. Whisk together flour, sugar, and salt in a large bowl.
  2. Cut the cold butter into the flour mixture until crumbly with pea-sized pieces.
  3. Add ice water gradually until the dough comes together.
  4. Shape the dough into a disc, wrap, and refrigerate for 45 minutes.
  5. Toss mulberries with sugar, cornstarch, vanilla, and lemon juice.
  6. Let the berry filling rest for 10 minutes.
  7. Preheat the oven to 190°C (375°F).
  8. Roll the chilled dough into a rustic circle on parchment paper.
  9. Spoon the mulberry filling into the center, leaving a border around the edges.
  10. Fold the pastry edges over the filling, pleating gently.
  11. Brush the crust with beaten egg and sprinkle with turbinado sugar.
  12. Bake for 35 to 40 minutes until golden brown and bubbling.
  13. Cool slightly before slicing and serving.
