Description

Moist, spiced pumpkin bread made with cinnamon, nutmeg, cloves, and ginger — perfect for fall breakfasts or snacks.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp ground ginger
  • 1 cup pumpkin puree (not pie filling)
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat & Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. Mix Wet Ingredients: In another bowl, whisk pumpkin puree, eggs, oil, sugars, milk, and vanilla.
  4. Combine: Gradually add dry mixture into wet, stirring until just combined. Do not overmix; batter should be slightly thick.
  5. Bake: Pour batter into loaf pan. Bake 55–65 minutes, or until a toothpick inserted in center comes out clean.
  6. Cool & Serve: Let cool in pan for 15 minutes, then transfer to a wire rack. Allow at least 1 hour cooling before slicing.

Notes

For extra flavor, fold in 1/2 cup chopped nuts or chocolate chips before baking.
