Ingredients

- 500g fresh sardines
- 3 tbsp extra virgin olive oil
- 4 cloves garlic (sliced)
- 1 lemon
- Fresh parsley
- Fresh oregano
- Sea salt
- Black pepper
- Red pepper flakes (optional)
Instructions
- Preheat oven to 200°C.
- Line a baking sheet with parchment paper.
- Arrange lemon slices and half of the herbs on the sheet.
- Place sardines on top in a single layer.
- Drizzle with olive oil and lemon juice.
- Add garlic slices and season with salt and pepper.
- Bake for 10–12 minutes until cooked through.
- Garnish with remaining herbs and a drizzle of olive oil.

Serve immediately for the best flavor and texture. Fresh sardines cook quickly and should remain moist and tender.
