Description
Soft and chewy maple pecan cookies packed with toasted pecans and rich maple flavor, finished with a warm maple icing.
Ingredients
- 2 1/3 cups (292g) all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) dark brown sugar, packed
- 1 large egg
- 1/3 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1 tsp maple extract
- 1 cup (120g) chopped pecans
- 2 tbsp (28g) unsalted butter
- 1/3 cup pure maple syrup
- 1 cup (112g) powdered sugar, sifted
- Pinch of salt
Instructions
- Whisk together the all-purpose flour, baking soda, and salt in a medium bowl.
- Cream the softened butter and dark brown sugar together in a large mixing bowl until light and fluffy.
- Beat in the egg, pure maple syrup, vanilla extract, and maple extract until completely smooth.
- Gradually mix the dry ingredients into the wet ingredients just until combined, then gently fold in the chopped pecans.
- Cover the dough tightly and chill in the refrigerator for 2 hours to prevent spreading.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop 1.5-tablespoon sized balls of chilled dough onto the sheets, leaving 3 inches of space between each.
- Bake for 12–13 minutes, or until the edges are just set.
- Let the cookies rest on the warm baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
- Warm the butter and pure maple syrup in a small saucepan over low heat until the butter is melted.
- Remove from heat and whisk in the sifted powdered sugar and a pinch of salt until smooth.
- Drizzle the warm maple icing over the cooled cookies.
- Allow about 1 hour for the icing to set completely before serving or storing.
Notes
Do not skip the 2-hour chill, as chilling helps prevent the cookies from spreading. Use 100% pure maple syrup and real maple extract for the best flavor. For extra flavor and crunch, toast the chopped pecans in a dry pan over medium heat for 3–5 minutes before folding them into the dough.
Timing: The total includes 20 minutes of preparation, 13 minutes of baking, 2 hours of chilling and about 1 hour for the icing to set. Allow additional time for the baked cookies to cool completely before icing.
