- 1 ½ cups Kodiak Cakes Power Cakes Mix (Buttermilk flavor)
- 1 tsp pumpkin pie spice
- ½ tsp ground cinnamon
- ½ tsp baking powder (optional for extra lift)
- Pinch of salt
Wet Ingredients:
- ¾ cup pure pumpkin puree (not pumpkin pie filling)
- 2 large eggs
- ⅓ cup maple syrup or honey
- ¼ cup unsweetened almond milk (or milk of choice)
- 2 tbsp melted coconut oil or butter
- 1 tsp vanilla extract
Optional Add-Ins:
- ¼ cup mini chocolate chips or chopped pecans
- 2 tbsp rolled oats for topping
Instructions
- Step 1 – Preheat & Prep: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray with nonstick cooking spray.
- Step 2 – Mix the Wet Ingredients: In a large bowl, whisk together pumpkin puree, eggs, maple syrup, milk, coconut oil, and vanilla until smooth and creamy.
- Step 3 – Add the Dry Ingredients: Add Kodiak mix, pumpkin pie spice, cinnamon, baking powder, and salt. Gently fold with a spatula until just combined — avoid overmixing for fluffy muffins.
- Step 4 – Add Extras (Optional): Fold in chocolate chips or nuts if desired.
- Step 5 – Fill & Bake: Divide the batter evenly between muffin cups (about ¾ full). Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Step 6 – Cool & Serve: Let muffins cool for 10 minutes before removing from the tin. Enjoy warm with almond butter, Greek yogurt, or your favorite fall spread!
