Description

These Healthy Pumpkin Kodiak Muffins are fluffy, protein-packed, and naturally sweetened with maple syrup. Perfect for cozy fall mornings or on-the-go breakfasts — made with wholesome ingredients and full of warm pumpkin spice flavor!

Ingredients

Scale

Dry Ingredients:

  • 1 ½ cups Kodiak Cakes Power Cakes Mix (Buttermilk flavor)
  • 1 tsp pumpkin pie spice
  • ½ tsp ground cinnamon
  • ½ tsp baking powder (optional for extra lift)
  • Pinch of salt

Wet Ingredients:

  • ¾ cup pure pumpkin puree (not pumpkin pie filling)
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • ¼ cup unsweetened almond milk (or milk of choice)
  • 2 tbsp melted coconut oil or butter
  • 1 tsp vanilla extract

Optional Add-Ins:

  • ¼ cup mini chocolate chips or chopped pecans
  • 2 tbsp rolled oats for topping

Instructions

  1. Step 1 – Preheat & Prep: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray with nonstick cooking spray.
  2. Step 2 – Mix the Wet Ingredients: In a large bowl, whisk together pumpkin puree, eggs, maple syrup, milk, coconut oil, and vanilla until smooth and creamy.
  3. Step 3 – Add the Dry Ingredients: Add Kodiak mix, pumpkin pie spice, cinnamon, baking powder, and salt. Gently fold with a spatula until just combined — avoid overmixing for fluffy muffins.
  4. Step 4 – Add Extras (Optional): Fold in chocolate chips or nuts if desired.
  5. Step 5 – Fill & Bake: Divide the batter evenly between muffin cups (about ¾ full). Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  6. Step 6 – Cool & Serve: Let muffins cool for 10 minutes before removing from the tin. Enjoy warm with almond butter, Greek yogurt, or your favorite fall spread!

Notes

💡 Pro Tip: These muffins freeze beautifully! Store leftovers in a freezer-safe bag for up to 2 months — just microwave for 20–30 seconds for a warm, cozy breakfast anytime.
