Instructions
- Step 1 – Prep the Zucchini: Grate zucchinis using a box grater. Place in a clean towel and squeeze out as much liquid as possible. Transfer to a mixing bowl.
- Step 2 – Mix the Batter: Add eggs, almond flour, Parmesan, mozzarella, garlic powder, salt, pepper, and green onions to the zucchini. Stir until mixture forms a slightly sticky dough.
- Step 3 – Shape the Fritters: Form into 8 small patties (about 2 tablespoons each) and place on a parchment-lined tray.
- Step 4 – Air Fry to Crispy Perfection: Preheat air fryer to 400°F (200°C) for 3 minutes. Spray basket with oil, arrange fritters in a single layer, and cook 8–10 minutes, flipping halfway, until golden and crisp.
