Description

Light, crispy, and golden brown — these Air Fryer Zucchini Fritters are the perfect healthy snack or side dish. Made with almond flour and Parmesan, they’re low-carb, gluten-free, and packed with flavor!

Ingredients

Scale

Main Ingredients:

  • 2 medium zucchinis, grated
  • 2 large eggs
  • ¼ cup almond flour (or oat flour for non-keto version)
  • ¼ cup grated Parmesan cheese
  • ¼ cup shredded mozzarella cheese
  • 2 tbsp chopped green onions
  • 1 tsp garlic powder
  • Salt and black pepper to taste

For Air Frying:

  • Cooking spray or olive oil mist

Optional for Serving:

  • Greek yogurt or sour cream
  • Fresh herbs like parsley or dill
  • Lemon wedges for freshness

Instructions

  1. Step 1 – Prep the Zucchini: Grate zucchinis using a box grater. Place in a clean towel and squeeze out as much liquid as possible. Transfer to a mixing bowl.
  2. Step 2 – Mix the Batter: Add eggs, almond flour, Parmesan, mozzarella, garlic powder, salt, pepper, and green onions to the zucchini. Stir until mixture forms a slightly sticky dough.
  3. Step 3 – Shape the Fritters: Form into 8 small patties (about 2 tablespoons each) and place on a parchment-lined tray.
  4. Step 4 – Air Fry to Crispy Perfection: Preheat air fryer to 400°F (200°C) for 3 minutes. Spray basket with oil, arrange fritters in a single layer, and cook 8–10 minutes, flipping halfway, until golden and crisp.
  5. Step 5 – Serve & Enjoy: Serve warm with Greek yogurt or garlic aioli. Garnish with herbs and lemon for a fresh, restaurant-style finish.

Notes

💡 Pro Tip: Squeeze out as much water from the zucchini as possible for ultra-crispy fritters. Excess moisture makes them soggy!
