Description

A naturally sweet frozen date bark layered with creamy peanut butter, fresh banana slices, rich dark chocolate, and crunchy roasted peanuts.


Ingredients

  • 12–15 large Medjool dates, pitted
  • â…“ cup smooth natural peanut butter or almond butter
  • 1 ripe banana, thinly sliced into rounds
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt for topping
  • Chopped roasted peanuts for topping

Instructions

  1. Line a baking sheet or tray with parchment paper.
  2. Split the pitted dates open and arrange them in overlapping rows.
  3. Place another sheet of parchment paper on top and flatten the dates into a cohesive layer using a heavy glass or rolling pin.
  4. Remove the top parchment paper.
  5. Spread the peanut butter evenly over the flattened date layer.
  6. Arrange the banana slices evenly across the top.
  7. Combine the dark chocolate chips and coconut oil in a microwave-safe bowl.
  8. Microwave in 30-second intervals, stirring between each, until smooth and melted.
  9. Pour the melted chocolate over the banana layer and spread evenly to the edges.
  10. Sprinkle chopped roasted peanuts and flaky sea salt over the chocolate.
  11. Freeze for 1 to 2 hours until the chocolate is fully firm.
  12. Break or chop into shards before serving.

Notes

Store the bark in the freezer for the best texture. Use ripe bananas for natural sweetness and creamy texture.
