- 2 teaspoons vanilla extract

Vanilla Glaze
- 1 cup powdered sugar
- 1–2 tablespoons milk

Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk eggs, milk, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the diced apples.
- Scoop mound-shaped portions of batter onto the prepared baking sheet.
- Bake for 11–12 minutes until golden and cooked through.
- Allow fritters to cool for about 5 minutes.
- Whisk powdered sugar, milk, and vanilla to make the glaze.
- Drizzle glaze over warm fritters and serve.
Notes
For extra flavor, try using a mix of apple varieties like Granny Smith and Honeycrisp. These fritters are best enjoyed warm but can be stored in an airtight container for up to 2 days.
