    • 4 egg yolks + 2 whole eggs
    • 1 to cups sugar
    • ½ cup butter, cubed
    • Optional: blooming gelatin (for firmer set)
  • Toppings (optional):
    • Whipped cream
    • Candied yuzu peel
    • Fresh berries
    • Mint sprigs

Instructions

  1. Prepare the crust: Mix crumbs, melted butter, and salt. Press into the bottom of individual jars. Chill or bake briefly if desired.
  2. Make the citrus curd: Combine sugar and lemon zest in a saucepan. Add yuzu and lemon juice, then gently heat. Whisk eggs separately, temper with warm juice mixture, and return everything to heat.
  3. Thicken the curd: Stir constantly until the mixture thickens and coats a spoon. Add cubed butter (and gelatin if using), then stir until smooth. Strain for a silky texture.
  4. Assemble jars: Spoon citrus curd over crust layer. Tap jars gently to release air bubbles. Seal and refrigerate for at least 4 hours or overnight.
  5. Garnish before serving: Top with whipped cream, candied peel, fresh berries, or mint sprigs as desired.

Notes
