- Filling:
- ¼–⅓ cup yuzu juice (bottled or frozen)
- ⅓ cup lemon juice
- 4 egg yolks + 2 whole eggs
- 1 to 1½ cups sugar
- ½ cup butter, cubed
- Optional: blooming gelatin (for firmer set)

- Whipped cream
- Candied yuzu peel
- Fresh berries
- Mint sprigs
Instructions
- Prepare the crust: Mix crumbs, melted butter, and salt. Press into the bottom of individual jars. Chill or bake briefly if desired.
- Make the citrus curd: Combine sugar and lemon zest in a saucepan. Add yuzu and lemon juice, then gently heat. Whisk eggs separately, temper with warm juice mixture, and return everything to heat.
- Thicken the curd: Stir constantly until the mixture thickens and coats a spoon. Add cubed butter (and gelatin if using), then stir until smooth. Strain for a silky texture.
- Assemble jars: Spoon citrus curd over crust layer. Tap jars gently to release air bubbles. Seal and refrigerate for at least 4 hours or overnight.
- Garnish before serving: Top with whipped cream, candied peel, fresh berries, or mint sprigs as desired.
Notes
Yuzu adds a floral brightness that sets this dessert apart. Use high-quality juice for best flavor. For a firmer set, add a touch of gelatin to the curd. Best served chilled and freshly garnished.
