Description

This creamy Yo Mama’s Ranch Pasta Salad is packed with crispy bacon, sharp cheddar, sweet peas, and juicy cherry tomatoes, all tossed in rich ranch dressing for the perfect make-ahead side dish.


Ingredients

  • 1 lb (454g) rotini or cavatappi pasta
  • 1 cup Yo Mama’s American Ranch Dressing
  • 6 slices thick-cut bacon, cooked crispy and chopped
  • 1 cup sharp cheddar cheese, cubed or shredded
  • 1 cup frozen sweet peas, thawed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 2 tbsp fresh chives or dill, finely chopped
  • 1/2 tsp freshly cracked black pepper
  • 1/4 tsp sea salt, or to taste
  • 1/4 cup extra Yo Mama’s Ranch Dressing, reserved for serving

Instructions

  1. Bring a large pot of heavily salted water to a rolling boil.
  2. Cook the pasta according to package directions until al dente, about 9 to 10 minutes.
  3. Drain and rinse under cold running water until completely cool, then drain well.
  4. While the pasta cooks, cook the bacon until crispy, then transfer to paper towels and chop.
  5. Halve the cherry tomatoes, finely dice the red onion, and thaw the peas.
  6. In a large mixing bowl, combine the cooled pasta, bacon, cheddar cheese, peas, tomatoes, and red onion.
  7. Pour in 1 cup of Yo Mama’s American Ranch Dressing and toss gently until evenly coated.
  8. Cover and refrigerate for at least 1 hour.
  9. Before serving, stir in the remaining 1/4 cup ranch dressing.
  10. Sprinkle with fresh chopped chives or dill, season with black pepper and salt to taste, and serve chilled.

Notes

For the best flavor, chill the salad for at least one hour before serving. Stirring in the reserved ranch dressing just before serving keeps the pasta salad extra creamy.
