Ingredients

Scale
  • For the Cheesecake Filling:
  • 8 oz (225 g) block-style cream cheese, softened to room temperature
  • 1/4 cup (30 g) powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 1/4 cup (60 g) fresh raspberries, gently mashed (or high-quality seedless raspberry preserves)
  • For the White Chocolate Shell Coating:
  • 1 cup (170 g) white chocolate chips or high-quality white melting wafers
  • 1 tbsp (14 g) coconut oil or shortening (optional, for ultra-smooth dipping consistency)
  • For Garnish and Finishing:
  • 1–2 tbsp freeze-dried raspberry powder or crushed freeze-dried raspberries
  • Extra melted white chocolate, for drizzling (optional)

Instructions

  1. Blend Cream Cheese Base: In a large mixing bowl, beat the softened block-style cream cheese, sifted powdered sugar, and pure vanilla extract together using an electric mixer or whisk until silky smooth and completely lump-free.
  2. Fold in Mashed Raspberries and Chill: Gently fold the mashed fresh raspberries or seedless raspberry preserves into the cream cheese base with a rubber spatula to create beautiful berry swirls. Place the mixture in the refrigerator for 30 minutes to firm up for easier shaping.
  3. Portion and Form Cheesecake Balls: Scoop out tablespoon-sized portions (~20g each) of the chilled cheesecake mixture and roll them into neat, smooth balls between your palms. Place each cheesecake ball on a parchment-lined baking sheet.
  4. Freeze Cheesecake Balls for 1 Hour: Transfer the parchment-lined baking sheet to the freezer for at least 1 hour until the cheesecake balls are rock-hard and completely solid. This step is essential for maintaining their shape during dipping.
  5. Melt White Chocolate Coating: In a small, deep microwave-safe bowl, combine the white chocolate chips or melting wafers with the optional coconut oil or shortening. Microwave in 30-second intervals at 50% power, stirring thoroughly between each burst until the coating is completely melted, glossy, and smooth.
  6. Dip and Coat Frozen Balls: Using a fork or dipping tool, submerge each frozen cheesecake ball into the warm melted white chocolate until completely coated. Lift out and gently tap the fork against the edge of the bowl to let the excess chocolate drip off, then place the coated truffle back onto the parchment paper.
  7. Garnish and Finish: While the white chocolate shell is still wet, immediately dust the tops with freeze-dried raspberry powder or crushed freeze-dried raspberries. Add an optional drizzle of extra melted white chocolate for a beautiful decorative finish.
  8. Set and Store: Refrigerate the coated cheesecake balls for at least 30 minutes to allow the white chocolate shell to harden completely before serving. Keep the finished truffles chilled until ready to serve!

Notes

  • Do Not Skip the Freezer Time: The cheesecake balls must be completely frozen and hard before dipping into the melted white chocolate. If they are even slightly soft, they will disintegrate and lose their shape in the warm chocolate.
  • Use Seedless Preserves out of Season: If fresh raspberries are out of season or too watery, use high-quality seedless raspberry preserves. Preserves provide intense berry flavor with low water activity.
  • Keep White Chocolate Warm and Fluid: If the white chocolate begins to thicken while dipping, reheat it in the microwave for 10 seconds and stir well to restore a smooth, fluid dipping consistency.
