Description

Buttery, chewy cookies made with nutty brown butter, roasted pistachios, and creamy white chocolate for an irresistible sweet and salty treat.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 2½ cups all-purpose flour, spooned and leveled
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup roasted, salted pistachios, roughly chopped, plus extra for garnish
  • 1 cup high-quality white chocolate chips or chopped white chocolate chunks

Instructions

  1. Melt the 1 cup butter in a saucepan over medium heat. Stir constantly as it foams and crackles. Once it turns deep golden brown with brown specks at the bottom and smells nutty, pour into a large mixing bowl and let cool for 10 minutes.
  2. Whisk the cooled brown butter, 1 cup light brown sugar, and ½ cup granulated sugar together until well combined and smooth.
  3. Beat in the 2 room-temperature eggs one at a time, followed by the 2 teaspoons vanilla extract, whisking for about 1 minute until pale and creamy.
  4. In a separate bowl, whisk together the 2½ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet brown butter mixture, mixing on low speed just until a cohesive dough forms without dry flour streaks.
  6. Gently fold in the 1 cup chopped roasted pistachios and 1 cup white chocolate chunks using a rubber spatula.
  7. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper. Scoop 2-tablespoon portions of dough onto the sheets 2 inches apart. Bake for 10 to 12 minutes until edges are golden and centers look slightly soft. Press extra pistachios and white chocolate onto the tops while the cookies are warm.

Notes

Let the browned butter cool for about 10 minutes before mixing it with the sugars. Do not overbake the cookies; the centers should remain slightly soft when they come out of the oven. Garnish with extra pistachios and white chocolate while the cookies are still warm.
