Description

A refreshing watermelon berry salad bursting with juicy strawberries, blueberries, raspberries, and a bright citrus mint glaze. Perfect for summer gatherings, picnics, or a light healthy dessert.


Ingredients

  • 4 cups seedless watermelon, cut into 1-inch cubes and drained
  • 1 cup fresh strawberries, hulled and quartered
  • 1 cup fresh blueberries
  • 1 cup fresh red raspberries
  • 2 tbsp fresh lime juice
  • 1 tbsp raw honey or agave nectar
  • 1/4 cup fresh mint leaves, finely sliced

Instructions

  1. Cut the watermelon into uniform cubes and place them in a colander for 10 minutes to drain excess juice.
  2. In a small bowl, whisk together the fresh lime juice and honey until smooth.
  3. Stir three-quarters of the sliced mint leaves into the lime mixture.
  4. In a large serving bowl, combine the drained watermelon, strawberries, and blueberries.
  5. Pour the citrus mint glaze evenly over the fruit.
  6. Using two spatulas, gently fold the fruit together until evenly coated.
  7. Scatter the raspberries and remaining mint leaves over the top as garnish.
  8. Refrigerate for 15 to 30 minutes before serving.
  9. Serve chilled and enjoy.

Notes

For the best texture, serve the salad well chilled. Drain the watermelon before assembling to prevent excess liquid from collecting in the bowl.
