- 4 cups seedless watermelon, cut into 1-inch cubes and drained
- 1 cup fresh strawberries, hulled and quartered
- 1 cup fresh blueberries
- 1 cup fresh red raspberries
- 2 tbsp fresh lime juice
- 1 tbsp raw honey or agave nectar
- 1/4 cup fresh mint leaves, finely sliced
Instructions
- Cut the watermelon into uniform cubes and place them in a colander for 10 minutes to drain excess juice.
- In a small bowl, whisk together the fresh lime juice and honey until smooth.
- Stir three-quarters of the sliced mint leaves into the lime mixture.
- In a large serving bowl, combine the drained watermelon, strawberries, and blueberries.
- Pour the citrus mint glaze evenly over the fruit.
- Using two spatulas, gently fold the fruit together until evenly coated.
- Scatter the raspberries and remaining mint leaves over the top as garnish.
- Refrigerate for 15 to 30 minutes before serving.
- Serve chilled and enjoy.
Notes
For the best texture, serve the salad well chilled. Drain the watermelon before assembling to prevent excess liquid from collecting in the bowl.
