Description

A vibrant, ultra-refreshing summer fruit salad made with juicy watermelon, sweet berries, crisp cucumber, and a zesty mint-lime honey dressing. Light, hydrating, and perfect for hot days.


Ingredients

  • 6 cups seedless watermelon (cut into 1-inch cubes)
  • 1 cup fresh blueberries
  • 1 cup English cucumber (diced)
  • 1 cup strawberries (hulled and sliced)
  • 3 tbsp fresh lime juice
  • 1 tbsp honey or agave nectar
  • 1/4 cup fresh mint leaves (finely minced)

Instructions

  1. Place chilled watermelon cubes, blueberries, cucumber, and strawberries into a large mixing bowl.
  2. In a small bowl, whisk together lime juice, honey, and finely minced mint until fully combined and smooth.
  3. Pour the dressing evenly over the fruit mixture.
