Description
This Masterclass Watermelon Feta Mint Summer Salad is the ultimate refreshing summer side dish. Juicy chilled watermelon, crisp cucumber, creamy feta, sweet red onion, and fresh mint come together with a bright lime dressing for a light and vibrant salad.
Ingredients
- 1.5 kg seedless watermelon, cut into 1-inch cubes and chilled
- 1 medium English cucumber, halved lengthwise and sliced into half-moons
- 200g premium Greek feta cheese, cubed or crumbled
- 30g (1/2 cup) fresh mint leaves
- 1/2 medium red onion, very thinly sliced
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lime juice or white balsamic vinegar
- 1/2 tsp freshly cracked black pepper
Instructions
- Cut the watermelon into 1-inch cubes and chill until very cold.
- Slice the red onion into thin strips and soak in ice water for 10 minutes. Drain and pat dry.
- Place the chilled watermelon cubes and sliced cucumber into a large mixing bowl.
- Drizzle with the extra virgin olive oil and gently toss until evenly coated.
- Add the drained red onion, lime juice or white balsamic vinegar, and black pepper.
- Gently toss the salad just enough to combine.
- Transfer the salad to a wide serving platter.
- Scatter the crumbled or cubed feta cheese evenly over the top.
- Tear the fresh mint leaves by hand and sprinkle over the salad.
- Serve immediately while well chilled.
Notes
Keep the watermelon thoroughly chilled before assembling for the best texture. Add the feta and mint just before serving to keep the salad fresh and vibrant. Taste before serving and add salt only if needed, as feta is naturally salty.
