Description

These easy waffle donuts are crispy on the edges, fluffy in the center, and finished with a classic vanilla donut glaze for a quick homemade treat.


Ingredients

  • 2 cups (240g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp ground nutmeg or cinnamon
  • 1/2 tsp fine sea salt
  • 2 large eggs, room temperature
  • 3/4 cup (180ml) whole milk or buttermilk, room temperature
  • 1/3 cup (75g) unsalted butter, melted and cooled slightly
  • 1 tsp pure vanilla extract
  • 1.5 cups (180g) powdered sugar, sifted
  • 34 tbsp whole milk or heavy cream
  • 1 tsp pure vanilla extract
  • Optional: Rainbow sprinkles or cinnamon-sugar (1/2 cup sugar + 1 tbsp cinnamon)

Instructions

  1. Whisk together the flour, sugar, baking powder, ground nutmeg or cinnamon, and salt in a large bowl.
  2. In a separate bowl or liquid measuring cup, whisk the eggs, milk, melted butter, and vanilla extract until completely combined.
  3. Pour the wet ingredients into the dry ingredients.
  4. Fold gently with a rubber spatula just until combined. Do not overmix.
  5. Preheat your waffle iron or mini donut-shaped waffle iron to medium-high heat.
  6. Spray liberally with non-stick cooking spray or brush both the top and bottom plates with melted butter.
  7. Dollop about 1/3 cup of batter into the center of each waffle cavity, leaving room for expansion.
  8. Close the lid and cook for 3 to 4 minutes until golden brown, crisp on the edges, and cooked through in the center.
  9. Carefully transfer the waffle donuts to a wire cooling rack.
  10. Whisk together the powdered sugar, milk or heavy cream, and vanilla extract until smooth.
  11. Glaze the waffle donuts and finish with rainbow sprinkles or cinnamon-sugar if desired.
  12. Serve and enjoy.

Notes

Do not overmix the batter. The batter should be thicker than standard pancake batter, resembling soft cake-donut dough. Leave room in each waffle cavity for the donuts to expand while cooking.
