Description

This Masterclass Viral Spicy Sesame Cucumber Salad is irresistibly crisp, refreshing, and packed with bold umami flavors. Thinly sliced cucumbers are coated in a savory sesame, soy, garlic, and chili crisp dressing that comes together in minutes with a simple shake.

Ingredients

Scale
  • 1 large English cucumber or 3 to 4 Persian cucumbers
  • 2 green onions, thinly sliced
  • 1.5 tbsp soy sauce or tamari
  • 1 tbsp toasted sesame oil
  • 1 to 2 tsp chili crisp oil
  • 1 tsp fish sauce or rice vinegar
  • 1 tsp granulated sugar
  • 1 garlic clove, finely grated or minced
  • 1 tbsp toasted sesame seeds
  • A pinch of MSG (optional)

Instructions

  1. Wash and thoroughly dry the cucumber.
  2. Using a mandoline or sharp knife, slice the cucumber into very thin rounds.
  3. Place the cucumber slices into a large container or bowl with a tight-fitting lid.
  4. Add the sliced green onions.
  5. Add the grated garlic, sesame seeds, sugar, and optional MSG.
  6. Pour in the soy sauce, sesame oil, fish sauce or rice vinegar, and chili crisp oil.
  7. Seal the container tightly.
  8. Shake vigorously for 30 to 45 seconds until the dressing becomes glossy and evenly coats every cucumber slice.
  9. Open the container and serve immediately for maximum crunch.
  10. Garnish with extra sesame seeds or green onions if desired.

Notes

For the crispiest texture, use fresh English or Persian cucumbers and serve immediately after shaking. Adjust the chili crisp to your preferred spice level, and add MSG for an authentic restaurant-style umami boost if desired.
