Ingredients

Scale
  • For the Raspberry Cookie Dough:
  • 1 tbsp + 2 tsp (20 ml) water
  • 2 tsp ground flaxseed
  • 1/2 cup (120 g) dairy-free butter, softened to room temperature
  • 3/4 cup (150 g) granulated sugar
  • 1 tsp pure vanilla extract
  • 2 cups (240 g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • 2/3 cup (100 g) dairy-free white chocolate chips or chunks
  • 1.75 oz (50 g) freeze-dried raspberries, lightly crushed
  • Thick raspberry jam, as needed for filling
  • For the White Chocolate Coating and Finish:
  • 7 oz (200 g) dairy-free white chocolate, chopped
  • Extra crushed freeze-dried raspberries, for garnishing

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 375°F (190°C) for a conventional oven or 355°F (180°C) for a convection oven. Line two large baking sheets with parchment paper and set them aside while preparing the soft vegan raspberry white chocolate cookie dough.
  2. Prepare the Ground Flaxseed Egg Substitute: In a small mixing bowl, combine 2 teaspoons of ground flaxseed with 1 tablespoon plus 2 teaspoons (20 ml) of water. Stir thoroughly until the flaxseed is evenly moistened, then allow the mixture to rest at room temperature for 5 minutes. During this time, the ground flaxseed will absorb the water and thicken into a gel-like mixture that helps bind the egg-free cookie dough together.
  3. Cream the Dairy-Free Butter, Sugar, and Vanilla: In a large mixing bowl or stand mixer fitted with the paddle attachment, combine 1/2 cup (120 g) of softened dairy-free butter, 3/4 cup (150 g) of granulated sugar, and 1 teaspoon of pure vanilla extract. Beat on medium speed for 2–3 minutes until the mixture becomes light, fluffy, smooth, and creamy. Add the prepared thickened flaxseed mixture and continue mixing until evenly incorporated into the creamed butter and sugar base.
  4. Sift and Incorporate the Dry Ingredients: Sift 2 cups (240 g) of all-purpose flour, 1 teaspoon of baking soda, and 1 teaspoon of cornstarch directly into the bowl containing the creamed dairy-free butter mixture. Mix gently on low speed or fold with a sturdy rubber spatula until the dry ingredients are fully incorporated and a thick, soft, uniform cookie dough forms. Avoid excessive mixing to preserve the tender texture of the finished cookies.
  5. Fold in the Dairy-Free White Chocolate and Raspberries: Add 2/3 cup (100 g) of dairy-free white chocolate chips or chunks and 1.75 oz (50 g) of lightly crushed freeze-dried raspberries to the prepared cookie dough. Using a rubber spatula, gently fold the inclusions into the mixture until they are evenly distributed throughout. Work carefully to preserve some visible raspberry pieces and avoid crushing the freeze-dried fruit into a fine powder. The dough should be thick, soft, and generously studded with creamy white chocolate and tangy raspberry pieces.
  6. Portion, Fill with Raspberry Jam, and Seal the Cookie Dough: Divide the prepared dough into 10–12 large, approximately equal portions. Roll each portion into a smooth ball, then gently press a deep indentation into the center with your thumb or the back of a small spoon. Add a small spoonful of thick raspberry jam to each indentation, taking care not to overfill. Carefully pull the surrounding dough up and over the jam filling, pinching the edges together firmly until the center is completely enclosed. Gently roll each filled portion between your palms to smooth the seams and form a rounded ball. Make sure no raspberry jam is exposed, as properly sealed dough helps prevent the filling from leaking during baking.
  7. Bake the Raspberry-Stuffed Cookies Until Lightly Golden: Arrange the filled cookie dough balls on the prepared parchment-lined baking sheets, leaving approximately 2 inches of space between each cookie. Transfer the baking sheets to the preheated oven and bake at 375°F (190°C) in a conventional oven, or 355°F (180°C) with convection, for approximately 10–12 minutes. The outer edges should become lightly golden and set while the centers remain soft and tender. Remove the cookies from the oven and allow them to firm up briefly on the baking sheets before carefully transferring them to a wire cooling rack. Let the cookies cool completely to room temperature before applying the white chocolate coating.
  8. Melt the Dairy-Free White Chocolate and Coat the Cookies: Place 7 oz (200 g) of chopped dairy-free white chocolate in a microwave-safe bowl. Microwave in short 20-second intervals, stirring thoroughly between each interval, until the chocolate is completely melted, smooth, and glossy. Avoid overheating, as dairy-free white chocolate can scorch or become grainy. Line a clean tray or flat surface with parchment paper and spoon a small puddle of melted white chocolate onto the parchment for each cookie base. Place a completely cooled cookie onto each chocolate puddle, then spoon additional melted white chocolate generously over the top of each cookie. Spread gently as needed to create a beautiful, even coating over the tops and around the sides.
  9. Decorate with Freeze-Dried Raspberries and Chill Until Set: While the dairy-free white chocolate coating is still soft and glossy, immediately sprinkle extra crushed freeze-dried raspberries over the tops of the cookies. The bright raspberry pieces will adhere to the chocolate and create a beautiful contrast against the creamy white coating. Transfer the decorated cookies to the refrigerator and chill for 10–20 minutes, or until the white chocolate shell has hardened completely. Once set, carefully lift the cookies from the parchment paper and arrange them on a serving platter. Enjoy their tender vanilla and raspberry cookie centers, rich dairy-free white chocolate shell, and deliciously fruity raspberry jam filling!

Notes

  • Choose a Thick, High-Pectin Raspberry Jam: Use a dense, fruit-forward raspberry jam, either seeded or seedless, for the cookie centers. A thick jam stays in place more effectively during baking, while watery jam can release excess steam and cause the dough seams to burst open. Avoid overfilling the cookies to help keep the fruity centers securely enclosed.
  • Seal the Raspberry Jam Filling Completely: After adding the raspberry jam to each dough portion, pull the surrounding dough over the filling and pinch the seams tightly together. Roll the filled dough gently between your palms to smooth the surface. A completely sealed center prevents raspberry jam from escaping onto the baking sheet during baking.
  • Cool the Cookies Completely Before Coating: Make sure the baked cookies have cooled fully to room temperature before dipping or covering them with melted dairy-free white chocolate. Warm cookies can prevent the chocolate coating from setting properly, causing the glossy shell to slide off or become uneven.
  • Allow the Flaxseed Mixture to Thicken: Combine the ground flaxseed with water and let it stand for the full 5 minutes before adding it to the creamed butter mixture. This resting period creates a gel-like consistency that helps bind the vegan cookie dough without using eggs.
  • Use Softened Dairy-Free Butter: The dairy-free butter should be softened but not melted. Properly softened butter creams smoothly with the sugar and vanilla while helping the cookies maintain a tender texture and a thick shape during baking.
  • Handle Freeze-Dried Raspberries Gently: Lightly crush the freeze-dried raspberries rather than grinding them into a fine powder. Keeping some small fruit pieces intact creates attractive pink-red speckles and concentrated bursts of tangy raspberry flavor throughout the cookie dough.
  • Melt Dairy-Free White Chocolate Slowly: Microwave the chopped dairy-free white chocolate in 20-second intervals, stirring carefully between each burst. Stop heating as soon as the chocolate is smooth and fully melted. Overheating can make white chocolate grainy or difficult to spread.
  • Decorate While the Chocolate Is Still Soft: Sprinkle the extra crushed freeze-dried raspberries over the cookies immediately after coating them. The warm chocolate helps the raspberry pieces adhere securely and gives the finished cookies a beautiful bakery-style appearance.
  • Chill Until the White Chocolate Shell Is Firm: Refrigerate the decorated cookies for 10–20 minutes, or until the dairy-free white chocolate coating has hardened completely. This produces a neat outer shell that makes the cookies easier to handle and serve without smearing the coating.
