Description

The Ultimate Summer Bruschetta Board is a beautiful entertaining platter featuring crispy garlic-rubbed toasts, creamy ricotta, fresh basil pesto, olive tapenade, juicy tomatoes, sweet peaches, and savory prosciutto. It’s the perfect centerpiece for summer gatherings, brunches, and outdoor parties.


Ingredients

  • 1 large crusty baguette or rustic sourdough loaf, sliced 1/2-inch thick
  • 1/4 cup high-quality extra virgin olive oil
  • 2 large garlic cloves, peeled and halved
  • 1 cup whole milk ricotta cheese, whipped with a pinch of salt and pepper
  • 1/2 cup fresh basil pesto
  • 1/2 cup olive tapenade or fig jam
  • 2 cups cherry tomatoes, quartered
  • 1 tbsp olive oil
  • Fresh basil, chopped
  • Balsamic glaze
  • 2 fresh summer peaches, thinly sliced
  • 4 oz thinly sliced prosciutto
  • Fresh basil leaves
  • Hot honey, for drizzling
  • Flaky sea salt

Instructions

  1. Preheat a grill pan or oven broiler. Brush both sides of the bread slices lightly with olive oil and toast for 2 to 3 minutes per side until golden brown with light char marks.
  2. While the bread is still hot, rub the cut side of a garlic clove over each toast to infuse it with fresh garlic flavor.
  3. Place the whipped ricotta, basil pesto, olive tapenade or fig jam, and the tomato mixture into small serving bowls. Arrange the bowls across a large serving board as the centerpiece.
  4. Fan the toasted bread around the bowls. Fill the remaining spaces with sliced peaches, ribbons of prosciutto, fresh basil leaves, and garnish with flaky sea salt, balsamic glaze, and hot honey. Serve immediately so guests can build their own bruschetta.

Notes

Toast the bread just before serving so it stays crisp. Prepare the tomato topping in advance, but drain any excess juices before serving to keep the bread from becoming soggy.
