Description

Ultimate Loaded Summer Guacamole is a fresh and flavorful twist on the classic dip, loaded with grilled sweet corn, juicy tomatoes, crispy bacon, creamy avocado, and tangy cotija cheese. Perfect for summer parties, BBQs, and taco nights.


Ingredients

  • 4 large ripe Hass avocados, peeled and pitted
  • 2 tbsp fresh lime juice
  • 1/2 cup red onion, finely diced
  • 1/2 cup fresh cilantro, finely chopped
  • 1 medium jalapeño or serrano pepper, seeded and finely minced
  • 2 cloves garlic, finely minced
  • 1 tsp fine sea salt
  • 1/2 tsp ground cumin
  • 1 cup grilled sweet corn kernels
  • 1 cup cherry or grape tomatoes, seeded and quartered
  • 1/2 cup thick-cut bacon, cooked crispy and crumbled
  • 1/3 cup cotija cheese or queso fresco, crumbled
  • 1 ripe mango, finely diced (optional)

Instructions

  1. In a large molcajete or glass bowl, combine the diced red onion, minced jalapeño, garlic, cilantro, and sea salt.
  2. Mash the mixture with a pestle or the back of a fork until a coarse paste forms.
  3. Add the ripe avocados and fresh lime juice.
  4. Mash gently, leaving plenty of chunky avocado pieces.
  5. Fold in half of the grilled sweet corn, tomatoes, bacon, cotija cheese, and ground cumin.
  6. Mix gently to keep the guacamole chunky.
  7. Transfer to a serving bowl.
  8. Top with the remaining grilled corn, tomatoes, bacon, cotija cheese, and extra cilantro.
  9. Serve immediately with warm tortilla chips.

Notes

For the best flavor, use perfectly ripe Hass avocados and serve immediately after preparing. If making ahead, press plastic wrap directly onto the surface to minimize browning.
