Description

Crispy golden chicken cutlets served over fresh romaine lettuce with a rich homemade Caesar dressing, crunchy garlic croutons, and shaved Parmesan. A restaurant-quality Caesar salad that’s perfect for lunch or dinner.


Ingredients

  • 500g chicken breasts, sliced into thin cutlets
  • 60g all-purpose flour
  • 2 large eggs, beaten with 1 tbsp water
  • 120g panko breadcrumbs
  • 30g Parmigiano-Reggiano, finely grated
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 4 tbsp neutral frying oil
  • 1 large egg yolk
  • 1.5 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, finely grated
  • 2 anchovy fillets, mashed (or 1 tsp Worcestershire sauce)
  • 120ml extra virgin olive oil
  • 40g Parmigiano-Reggiano, finely grated
  • 1/4 tsp kosher salt
  • 2 large heads romaine lettuce, washed and torn
  • 60g garlic croutons
  • Extra shaved Parmesan cheese, for serving

Instructions

  1. Pound the chicken cutlets to an even 1/4-inch thickness. Prepare three bowls with seasoned flour, beaten eggs, and panko mixed with Parmesan. Coat each cutlet in flour, egg, then panko.
  2. Heat the oil in a large skillet over medium-high heat. Fry the chicken for about 3 minutes per side until crispy and golden brown. Transfer to a wire rack.
  3. Whisk together the egg yolk, lemon juice, Dijon mustard, garlic, and anchovy paste. Slowly drizzle in the olive oil while whisking continuously until thick and creamy. Stir in the Parmesan and salt.
  4. Toss the dry romaine lettuce with half of the Caesar dressing until evenly coated. Add the croutons and toss gently.
  5. Slice the crispy chicken into strips and arrange over the dressed salad.
  6. Top with shaved Parmesan, drizzle with the remaining dressing if desired, and serve immediately.

Notes

Dry lettuce is essential for the dressing to cling properly. Rest the fried chicken on a wire rack instead of paper towels to keep the coating crisp.
