- 1/2 cup (120ml) neutral vegetable oil or melted unsalted butter
- 1 can (15 oz / 425g) pure pumpkin puree
- 3 large eggs, room temperature
- 1 tsp pure vanilla extract
- 1 cup (120g) all-purpose flour
- 1/2 cup (100g) dark brown sugar, packed
- 1 tsp ground cinnamon
- 1/2 cup (115g) cold unsalted butter, cubed
- 1/2 cup (60g) pecans, finely chopped
- 1 cup (120g) powdered sugar, sifted
- 2 tbsp pure maple syrup
- 1–2 tbsp heavy cream or milk
Instructions
- In a medium bowl, combine the flour, dark brown sugar, ground cinnamon, and chopped pecans.
- Cut in the cold cubed butter using a pastry cutter or your fingertips until coarse, pea-sized crumbs form.
- Transfer the crumble to the refrigerator while preparing the batter.
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
- In a large bowl, whisk the granulated sugar, brown sugar, oil, pumpkin puree, eggs, and vanilla extract until smooth.
- Fold the dry ingredients into the wet pumpkin mixture using a rubber spatula just until combined.
- Spread the batter evenly into the prepared baking dish.
- Scatter the chilled cinnamon pecan crumble generously across the entire surface of the batter.
- Bake at 350°F (175°C) for 38 to 42 minutes, until a toothpick inserted into the center comes out clean.
- Transfer the cake to a wire rack and cool completely.
- Whisk the powdered sugar, maple syrup, and heavy cream or milk together until smooth.
- Drizzle the maple glaze over the cooled cake before slicing and serving.

Keep the crumble chilled until ready to use so it stays buttery and crumbly during baking. Let the cake cool completely before adding the maple glaze for the cleanest finish.
