Description

Tropical Mango Coconut Overnight Oats are a creamy, refreshing make-ahead breakfast layered with coconut-infused oats, sweet mango purée, juicy mango chunks, and toasted coconut. Perfect for busy mornings and meal prep.


Ingredients

  • 1 cup rolled old-fashioned oats (gluten-free if needed)
  • 1 cup light coconut milk (or coconut milk drink)
  • 1/2 cup plain or vanilla Greek yogurt (or coconut yogurt for vegan)
  • 1 tbsp chia seeds
  • 1–2 tbsp pure maple syrup or honey
  • 1/2 tsp pure vanilla extract
  • 1 pinch fine sea salt
  • 1 cup fresh or frozen mango chunks (thawed if frozen)
  • 2 tbsp unsweetened toasted coconut flakes
  • 1 tbsp macadamia nuts or slivered almonds (optional)

Instructions

  1. In a bowl or large measuring cup, whisk together the rolled oats, coconut milk, Greek yogurt, chia seeds, maple syrup or honey, vanilla extract, and a pinch of sea salt until well combined.
  2. Blend 1/2 cup of the mango chunks until smooth to make a mango purée. Dice the remaining 1/2 cup of mango into small cubes.
  3. Divide half of the oat mixture between two mason jars or glass containers. Add a layer of mango purée, then top with the remaining oat mixture.
  4. Seal the jars and refrigerate for at least 4 hours or overnight. Before serving, top with diced mango, toasted coconut flakes, and chopped macadamia nuts or slivered almonds if desired.

Notes

For the creamiest texture, chill the oats overnight. Use ripe, sweet mangoes for the best tropical flavor. Store covered in the refrigerator for up to 4 days, adding the toppings just before serving for maximum freshness and crunch.
