- ½ cup vegetable oil
- 1 cup boiling water or hot coffee
- 8 oz high-quality milk chocolate, chopped
- 2 cups heavy whipping cream, divided
- 8 oz premium dark chocolate (60% cacao), finely chopped
Instructions
- Preheat the oven to 350°F (180°C) and grease two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, and vegetable oil and beat on medium speed for 2 minutes until smooth.
- Slowly whisk in the boiling water or hot coffee until fully incorporated.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
- Cool the cake layers completely.
- Heat 1 cup heavy cream until simmering and pour over the milk chocolate.
- Let sit for 2 minutes, then whisk until smooth.
- Chill for 1 hour, then whip until light and fluffy.
- Spread the whipped milk chocolate filling between the cake layers.
- Heat the remaining 1 cup heavy cream and pour over the dark chocolate.
- Whisk until a smooth, glossy ganache forms.
- Place the assembled cake on a wire rack and pour the ganache over the top, allowing it to flow down the sides.
- Chill for 30 minutes before slicing and serving.
Notes
Using hot coffee instead of water deepens the chocolate flavor without making the cake taste like coffee. Chill the ganache slightly if you prefer a thicker glaze.
