Description
This Masterclass Moist Chocolate Chip Banana Bread is ultra-soft, rich, and packed with ripe bananas and melty chocolate chips. Sour cream keeps the crumb incredibly tender while a blend of butter and oil creates the perfect moist texture in every slice.
Ingredients
Scale
- 3 to 4 medium very ripe bananas (approx. 400g / 1.5 cups mashed)
- 60g (1/4 cup) unsalted butter, melted and slightly cooled
- 60ml (1/4 cup) vegetable or canola oil
- 100g (1/2 cup) packed dark brown sugar
- 100g (1/2 cup) granulated white sugar
- 2 large eggs, room temperature
- 60g (1/4 cup) sour cream or full-fat plain Greek yogurt
- 1.5 tsp pure vanilla extract
- 250g (2 cups) unbleached all-purpose flour
- 1 tsp baking soda
- 1/2 tsp fine sea salt
- 1/2 tsp ground cinnamon
- 150g (1 cup) semi-sweet or dark chocolate chips
- 2 tbsp extra chocolate chips for topping
Instructions
- Preheat oven to 175°C (350°F). Grease and line a 9×5-inch loaf pan with parchment paper.
- Mash the ripe bananas until mostly smooth.
- Whisk in the melted butter, vegetable oil, dark brown sugar, and granulated sugar until well combined.
- Add the eggs one at a time, whisking well after each addition.
- Whisk in the sour cream (or Greek yogurt) and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, sea salt, and cinnamon.
- Fold the dry ingredients into the wet mixture just until no flour streaks remain.
- Gently fold in the chocolate chips.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Sprinkle the extra chocolate chips over the surface.
- Bake for 60–65 minutes. If the top browns too quickly after 45 minutes, loosely cover with aluminum foil.
- The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use heavily speckled ripe bananas for the sweetest flavor and moistest crumb. Avoid overmixing the batter to keep the bread soft and tender. Let the loaf cool completely before slicing for the best texture.
