Description

Thai Style Pineapple Fried Rice is a vibrant, restaurant-style dish featuring fragrant jasmine rice, juicy pineapple, shrimp, toasted cashews, raisins, and aromatic curry seasoning. Sweet, savory, and full of tropical flavors, it’s perfect for a quick weeknight dinner or entertaining.

  • 3 cups cooked Jasmine rice (chilled day-old rice)
  • 1.5 cups fresh pineapple, cut into 3/4-inch chunks
  • 1/2 lb (225g) raw medium shrimp, peeled and deveined (or diced chicken thigh)
  • 3 tbsp neutral oil (canola or peanut oil)
  • 3 cloves garlic, finely minced
  • 1 small yellow onion, diced
  • 2 large eggs, lightly beaten
  • 1/2 cup frozen peas and diced carrots, thawed
  • 1/3 cup unsalted raw cashews, toasted
  • 1/4 cup raisins or dried cranberries
  • 2 green onions, chopped
  • 2 tbsp soy sauce or tamari
  • 1 tbsp fish sauce (or extra soy sauce for vegetarian)
  • 1 tsp yellow curry powder
  • 1 tsp sugar
  • 1/4 tsp white or black pepper

Instructions

  1. In a small bowl, whisk together the soy sauce, fish sauce, yellow curry powder, sugar, and pepper until well combined.
  2. Heat 2 tablespoons of oil in a large wok or heavy skillet over high heat. Add the garlic and onion and stir-fry for 1 minute. Add the shrimp and cook for about 2 minutes until pink. Push everything to one side of the pan.
  3. Add the remaining tablespoon of oil to the empty side of the wok. Pour in the beaten eggs and scramble until just set, then mix with the shrimp and onions.
  4. Add the chilled jasmine rice, breaking up any clumps. Pour in the seasoning sauce and stir-fry for about 2 minutes. Fold in the pineapple, peas and carrots, raisins, toasted cashews, and green onions. Toss for another minute until heated through and serve immediately, optionally in a carved pineapple boat.

Notes

Day-old chilled jasmine rice produces the best texture for fried rice. Toast the cashews before adding for extra flavor and crunch. For an authentic presentation, serve inside a hollowed pineapple and garnish with cilantro and lime wedges.
