Description

Juicy, cheesy mini meatloaf bites baked to perfection! Each one is stuffed with melty cheese, brushed with a tangy glaze, and perfect for appetizers, parties, or meal prep.


Ingredients

  • 1 lb ground beef (85/15 recommended)
  • ½ cup breadcrumbs (use gluten-free if needed)
  • ¼ cup grated Parmesan
  • ¼ cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 Tbsp ketchup
  • 1 Tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 oz mozzarella or cheddar cheese, cut into small cubes
  • ¼ cup ketchup + 1 Tbsp brown sugar (mixed for glaze)
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin or small silicone cups with oil spray.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, egg, onion, ketchup, Worcestershire sauce, garlic powder, Italian seasoning, salt, and pepper. Mix gently with your hands or a fork until just combined — do not overmix.
  3. Scoop about 1 tablespoon of meat mixture and form into a small patty. Place a cube of cheese in the center, then wrap the meat around to seal. Drop each ball into a mini muffin cup. (Keep cheese cubes small to prevent oozing.)
  4. Brush each bite with the ketchup and brown sugar glaze. Bake for 18–20 minutes, until the tops are browned and the internal temperature reaches 160°F (71°C). Let rest for 5 minutes, then loosen with a spoon and transfer to a serving tray.
  5. Garnish with chopped parsley or drizzle with extra sauce. Serve warm with dipping sauces like BBQ, ranch, or spicy ketchup.

Notes

For easy cleanup, line your mini muffin tin with silicone liners. These freeze beautifully — reheat in the oven or air fryer for a quick snack or dinner!
