Description

This Masterclass Street Corn (Elote) Dip brings together smoky charred sweet corn, creamy lime dressing, Cotija cheese, fresh cilantro, and warm spices for an irresistible Mexican-inspired appetizer. Perfect with tortilla chips, crackers, or fresh vegetables.


Ingredients

  • 500g sweet corn kernels
  • 1 tbsp unsalted butter or neutral cooking oil
  • 1 jalapeño pepper, finely minced
  • 2 cloves garlic, minced
  • 60g mayonnaise
  • 60g sour cream or Mexican crema
  • Juice of 1 large lime
  • 1/2 tsp chili powder or smoked paprika, plus extra for garnish
  • 1/2 tsp ground cumin
  • 50g Cotija cheese or crumbled feta, divided
  • 1 handful fresh cilantro, finely chopped
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Heat a large cast-iron skillet over high heat and melt the butter or heat the oil.
  2. Add the corn in a single layer and cook undisturbed for 2 to 3 minutes.
  3. Stir and continue cooking for another 3 to 4 minutes until the corn is deeply charred.
  4. Reduce the heat to medium.
  5. Add the minced jalapeño and garlic and cook for 2 to 3 minutes until fragrant.
  6. Transfer the corn mixture to a large bowl and let cool for 5 minutes.
  7. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and black pepper.
  8. Pour the dressing over the warm corn mixture.
  9. Add three-quarters of the Cotija cheese and most of the chopped cilantro.
  10. Fold gently until evenly coated.
  11. Transfer the dip to a serving bowl.
  12. Top with the remaining Cotija cheese, extra cilantro, and a sprinkle of chili powder or smoked paprika.
  13. Serve warm or chilled with tortilla chips, crackers, or fresh vegetables.

Notes

Fresh corn develops the best smoky flavor when charred over high heat, but thawed frozen corn works beautifully as well. Let the corn cool slightly before mixing with the dressing to maintain its creamy texture without separating.
