Description

Delicate, buttery meltaway cookies bursting with strawberry and lemon flavors, finished with a sweet citrus glaze.


Ingredients

Scale
  • 1 cup butter (softened)
  • 1/2 cup powdered sugar
  • 1 3/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 tsp salt
  • 2 tbsp strawberry puree or freeze-dried powder
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp lemon juice (for glaze)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Cream butter and powdered sugar until light and fluffy.
  3. Mix in strawberry puree, lemon juice, and lemon zest.
  4. Add flour, cornstarch, and salt and mix gently until dough forms.
  5. Roll dough into small balls and flatten slightly.
  6. Chill dough for 20–30 minutes.
  7. Bake for 12–15 minutes until set.
  8. Mix powdered sugar and lemon juice to make glaze.
  9. Drizzle glaze over cooled cookies.

Notes

Do not overbake to keep the soft meltaway texture. Let cookies cool completely before adding glaze.
