- 1/2 cup powdered sugar
- 1 3/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1/2 tsp salt
- 2 tbsp strawberry puree or freeze-dried powder
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 cup powdered sugar (for glaze)
- 2 tbsp lemon juice (for glaze)
Instructions
- Preheat oven to 325°F (160°C).
- Cream butter and powdered sugar until light and fluffy.
- Mix in strawberry puree, lemon juice, and lemon zest.
- Add flour, cornstarch, and salt and mix gently until dough forms.
- Roll dough into small balls and flatten slightly.
- Chill dough for 20–30 minutes.
- Bake for 12–15 minutes until set.
- Mix powdered sugar and lemon juice to make glaze.
- Drizzle glaze over cooled cookies.
Notes
Do not overbake to keep the soft meltaway texture. Let cookies cool completely before adding glaze.
