Description

Creamy, no-bake Strawberry Crunch Cheesecake Bites with a buttery Golden Oreo crust, fluffy cheesecake filling, and a crunchy strawberry cookie topping — the perfect bite-sized dessert for any occasion!

Ingredients

Scale
  • 1 ½ cups Golden Oreo crumbs (about 18 cookies)
  • 5 Tbsp melted butter
  • 1 Tbsp sugar
  • 16 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, whipped stiff
  • 12 Golden Oreos, crushed
  • 1 Tbsp strawberry gelatin mix (Jell-O)
  • 2 Tbsp unsalted butter, melted
  • Optional: fresh strawberry slices and white chocolate drizzle for garnish

Instructions

  1. Prepare the Crust: Line an 8×8-inch pan with parchment paper. Mix crushed Golden Oreos, melted butter, and sugar until combined. Press firmly into the bottom of the pan and chill for 10 minutes while preparing the filling.
  2. Make the Cheesecake Filling: In a large bowl, beat cream cheese and powdered sugar until smooth. Add vanilla extract and mix until creamy. Fold in the whipped cream gently until light and fluffy. Spread evenly over the chilled crust.
  3. Create the Strawberry Crunch Topping: In a separate bowl, combine crushed cookies, strawberry gelatin powder, and melted butter. Stir until coated and crumbly. Sprinkle evenly over the cheesecake layer and press lightly to adhere.
  4. Chill and Slice: Refrigerate for at least 2 hours (or overnight) until firm. Lift using parchment, then cut into 1-inch squares. Garnish with fresh strawberries or a white chocolate drizzle if desired.

Notes

For the best texture, keep refrigerated until serving. You can substitute Golden Oreos with graham crackers or vanilla wafers and use freeze-dried strawberry crumbs instead of gelatin mix for a natural version.
