Description
Creamy strawberry coconut popsicles with beautiful marbled layers made from fresh strawberries and rich coconut cream. These refreshing frozen treats are naturally dairy-free and bursting with tropical flavor.

- 400g (about 3 cups) fresh strawberries, hulled and halved
- 2 tbsp pure maple syrup or honey
- 1 tbsp fresh lime juice
- 400ml full-fat canned coconut cream, chilled overnight
- 3 tbsp pure maple syrup
- 1 tsp pure vanilla extract or vanilla bean paste
Instructions
- Add the strawberries, 2 tablespoons maple syrup, and lime juice to a blender.
- Blend for 1 to 2 minutes until completely smooth.
- Pour the strawberry puree into a measuring cup and set aside.
- Scoop the thick coconut cream from the chilled can into a mixing bowl or blender.
- Add 3 tablespoons maple syrup and the vanilla extract.
- Whisk or blend until smooth and creamy.
- Alternate spoonfuls of strawberry puree and coconut cream into popsicle molds.
- Swirl gently with a butter knife or skewer to create a marbled effect.
- Insert popsicle sticks into the center of each mold.
- Freeze for 4 to 6 hours or overnight until completely solid.
- To unmold, run the molds under warm water for 10 to 15 seconds.
- Gently pull the popsicles out and serve immediately.
Notes
Use full-fat coconut cream chilled overnight for the creamiest texture. Avoid light coconut milk, as it won’t create the same rich consistency. Freeze overnight for the best results.
