- 4 large fresh strawberries, hulled
- 3 oz high-quality 100% pineapple juice
- ½ oz fresh lime juice
- ½ oz simple syrup or agave nectar
- 2 oz premium white rum, vodka, or silver tequila
- Fresh pineapple wedges, for garnish
- Whole strawberries, for garnish
- 1 sprig fresh mint, for garnish
- Ice cubes
Instructions
- Add the hulled strawberries and simple syrup to a cocktail shaker.
- Muddle thoroughly until the strawberries become a juicy mash.
- Pour in the white rum, pineapple juice, and fresh lime juice.
- Fill the shaker completely with ice cubes.
- Seal tightly and shake vigorously for 15 seconds until the shaker is frosted.
- Fill a highball glass or large wine glass with fresh ice.
- Double strain the cocktail through a cocktail strainer and fine-mesh sieve into the prepared glass.
- Garnish with a fresh pineapple wedge and a whole strawberry.
- Slap the mint sprig gently to release its oils and place it beside the fruit garnish.
- Serve immediately and enjoy.
Notes
Double straining removes strawberry seeds and pineapple fibers for a smoother cocktail. Use freshly squeezed lime juice for the best flavor.
