- 1 tablespoon oyster sauce or mushroom oyster sauce
- 1 tablespoon rice vinegar
- 1 to 2 teaspoons brown sugar or honey
- 1/2 cup beef broth or water
- 1 1/2 teaspoons cornstarch (for sauce)
- 2 tablespoons neutral oil (for cooking)
- Few drops toasted sesame oil (optional)
Instructions
- In a bowl, combine sliced beef with soy sauce, Shaoxing wine, cornstarch, neutral oil, and baking soda if using.
- Marinate 15 to 20 minutes.
- Trim bok choy by slicing off the base and separating stems from leaves.
- Rinse thoroughly and drain well.
- Chop stems into 1-inch pieces and keep leaves larger.
- In a small bowl, whisk soy sauce, oyster sauce, rice vinegar, brown sugar, beef broth, and cornstarch.
- Heat a wok or large skillet over high heat.
- Add 1 tablespoon oil and sear beef in a single layer 1 to 2 minutes per side.
- Remove beef and set aside.
- Add remaining oil to pan.
- Stir-fry garlic and ginger 30 seconds until fragrant.
- Add bok choy stems and cook 1 to 2 minutes.
- Add leaves and cook until just wilted.
- Return beef to pan.
- Pour in sauce and toss until thickened and glossy.
- Finish with scallions and a few drops sesame oil if desired.
- Serve immediately.

Prep all ingredients before cooking since stir-frying moves quickly. Avoid overcrowding the pan to keep beef tender and vegetables crisp.
