Description

Fresh and vibrant Spring Produce: Lemon Asparagus Pasta packed with zesty lemon flavor, tender asparagus, and a light parmesan finish for a perfect seasonal dish.


Ingredients

Scale
  • 12 oz pasta (spaghetti or penne)
  • 1 bunch asparagus, trimmed and cut
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup grated parmesan cheese
  • Salt
  • Black pepper
  • Red pepper flakes (optional)
  • Cherry tomatoes (optional)
  • Fresh basil (optional)

Instructions

  1. Boil pasta in salted water until al dente and reserve some pasta water.
  2. Sauté asparagus in olive oil for 4–5 minutes until tender.
  3. Add minced garlic and cook briefly until fragrant.
  4. Add cooked pasta to the pan and toss to combine.
  5. Pour in lemon juice and add lemon zest, mixing well.
  6. Add grated parmesan cheese and toss until creamy, adding reserved pasta water if needed.
  7. Season with salt and black pepper, then serve warm.

Notes

Use fresh asparagus for the best flavor and texture. Add a splash of reserved pasta water to create a silky sauce.
