Description

This Spring Greens Salad with White Balsamic Vinaigrette is fresh, crisp, and colorful, combining tender spring greens with crunchy vegetables, creamy cheese, toasted almonds, and a bright homemade dressing.


Ingredients

  • 5 oz (140g) organic spring mix greens (baby spinach, red leaf, mizuna, chard)
  • 4 radishes, thinly shaved
  • 1/2 English cucumber, thinly sliced
  • 1/2 cup (60g) crumbled goat cheese or feta
  • 1/3 cup (40g) sliced almonds, toasted
  • 1 avocado, diced (optional)
  • 1/2 cup fresh sugar snap peas, sliced diagonally
  • 1/4 cup (60ml) white balsamic vinegar
  • 1/2 cup (120ml) extra virgin olive oil
  • 1 tbsp pure honey or maple syrup
  • 1 tsp Dijon mustard
  • 1 small shallot, finely minced
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. In a small glass jar or bowl, combine the white balsamic vinegar, Dijon mustard, honey, minced shallot, sea salt, and black pepper.
  2. Slowly drizzle in the extra virgin olive oil while whisking vigorously, or seal the jar and shake vigorously for 30 seconds, until completely emulsified.
  3. Place the spring mix in a salad spinner and dry thoroughly.
  4. Thinly slice the radishes, English cucumber, and sugar snap peas using a sharp knife or mandoline.
  5. Toast the sliced almonds in a dry skillet over medium heat for 3 to 4 minutes until golden and fragrant.
  6. Transfer the dried spring greens to a large serving bowl.
  7. Scatter the shaved radishes, sliced cucumber, snap peas, and diced avocado over the greens.
  8. Sprinkle the crumbled goat cheese or feta and toasted almonds over the salad.
  9. Drizzle half of the white balsamic vinaigrette over the salad right before serving.
  10. Gently toss with salad tongs until the greens and vegetables are lightly coated.
  11. Serve immediately with the remaining vinaigrette on the side.

Notes

Dry the spring greens thoroughly before dressing so the vinaigrette clings to the leaves instead of sliding off. Add the avocado just before serving to keep it fresh and creamy.
