Description

Pumpkin Pecan Cobbler is a classic Southern hamburger steak with rich onion gravy, juicy pan-seared beef patties, and comforting diner-style flavor perfect for an easy comfort food dinner.


Ingredients

  • 1 1/2 pounds ground beef (80/20 or 85/15)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce (for gravy)
  • 1/2 teaspoon black pepper (for gravy)
  • Salt to taste
  • 4 to 8 ounces mushrooms, sliced (optional)
  • 1 to 2 tablespoons neutral oil

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and smoked paprika if using.
  2. Mix gently just until combined.
  3. Divide into 4 to 6 patties and press a small dent in the center of each.
  4. Heat a large skillet over medium-high heat and add oil.
  5. Sear patties 3 to 4 minutes per side until browned.
  6. Remove patties to a plate.
  7. Lower heat to medium and add sliced onions.
  8. Cook 6 to 8 minutes until soft and golden.
  9. Add mushrooms if using and cook 3 minutes.
  10. Add butter and sprinkle flour over onions.
  11. Stir 1 minute to cook flour.
  12. Slowly whisk in beef broth.
  13. Add Worcestershire sauce and pepper.
  14. Simmer 3 to 5 minutes until thickened.
  15. Return patties to skillet and spoon gravy over top.
  16. Simmer on low 8 to 10 minutes until cooked through.
  17. Rest 2 to 3 minutes before serving.

Notes

Do not overmix the beef to keep patties tender. Pressing a small dent in the center helps patties cook evenly and prevents puffing.
