Description

These White Chocolate Cranberry Cookies are soft, chewy, and packed with creamy white chocolate chips and sweet, tangy dried cranberries. Made with brown sugar and a touch of cornstarch, they have perfectly tender centers and lightly golden edges. These delicious homemade cookies are perfect for holiday baking, cookie exchanges, or a sweet treat any time of year.

Ingredients

Scale
  • 3/4 cup (170 g) unsalted butter, softened
  • 3/4 cup (150 g) packed brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 2 tsp pure vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (135 g) white chocolate chips
  • 1 cup (140 g) dried cranberries

Instructions

  1. Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, packed brown sugar, and granulated sugar together with an electric mixer until smooth, light, and creamy.
  2. Add Egg and Vanilla: Beat in the egg and pure vanilla extract until completely incorporated and cohesive.
  3. Whisk Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt to ensure even distribution. The cornstarch helps create ultra-soft cookie centers.
  4. Combine Dry Mix, White Chocolate, and Cranberries: Gradually add the dry flour mixture into the wet ingredients, mixing on low speed just until combined. Gently fold in the white chocolate chips and dried cranberries using a rubber spatula.
  5. Chill Dough for 1 Hour: Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour until firm. This helps solidify the butter and allows the starches to hydrate.
  6. Preheat Oven and Prep Pans: Preheat your oven to 350°F (177°C) and line two large baking sheets with parchment paper.
  7. Portion Cookie Dough: Scoop 1 1/2-tablespoon portions of chilled dough onto the prepared baking sheets, leaving 3 inches of space between each cookie to accommodate spreading.
  8. Bake Until Edges Are Barely Golden: Bake for 11–12 minutes, or until the edges are lightly colored and golden while the centers remain pale and soft. Avoid overbaking to preserve the chewy texture.
  9. Cool and Set: Allow the cookies to rest on the warm baking sheets for 5 minutes before transferring them to a wire cooling rack to cool completely.

Notes

  • Use Dried Cranberries (Not Fresh): Always use sweetened dried cranberries, such as Craisins. Fresh cranberries contain a high amount of water, which can release moisture and create wet, sour pockets that affect the cookie’s structure.
  • Don’t Skip the Cornstarch: The 2 teaspoons of cornstarch interfere with gluten formation, creating an unmistakably soft, melt-in-your-mouth bakery texture.
  • Underbake Slightly for Maximum Chewy Texture: Remove the cookies from the oven when the edges are set but the centers still look slightly soft and underbaked. They will finish setting gently as they rest on the warm baking sheet.
