- 1 cup packed parsley
- 1/4 cup cilantro (optional)
- 1 tablespoon fresh oregano or 1 teaspoon dried oregano
- 1/2 cup roasted red peppers, drained
- 3 to 4 garlic cloves
- 1 to 1 1/2 teaspoons smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup red wine vinegar
- 1/2 to 2/3 cup olive oil
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice (optional)
Instructions
- Add parsley, cilantro, oregano, garlic, roasted red peppers, smoked paprika, red pepper flakes, salt, and black pepper to a food processor.
- Pulse until finely chopped but not pureed.
- Add red wine vinegar and pulse briefly to combine.
- With the processor running, drizzle in olive oil until mixture is loose and spoonable.
- Stir in lemon juice if using.
- Let rest 10 minutes before serving.
- Taste and adjust salt, vinegar, or oil as needed.
Notes
For a thinner sauce, add a bit more olive oil. Letting it rest allows flavors to meld and deepen before serving.
