Description
These Sicilian Almond Pizzicotti Cookies are wonderfully soft, chewy, and bursting with fragrant lemon and orange flavor. Made with finely ground blanched almond flour, fresh citrus zest, and a delicate egg white base, these traditional Italian almond cookies feature beautifully cracked powdered sugar exteriors and tender, marzipan-like centers. Their distinctive pinched shape and irresistible almond-citrus aroma make them perfect for holiday cookie trays, elegant gatherings, homemade gifts, or enjoying with a warm cup of espresso.
Ingredients
- For the Sicilian Almond Paste Base:
- 1 3/4 cups (170 g) blanched almond flour
- 1/3 cup (80 g) granulated sugar
- Zest of 1/2 organic lemon
- Zest of 1/2 organic orange
- 1 large egg white, room temperature
- 1 tbsp freshly squeezed lemon juice
- For the Cracked Coating Finish:
- 1/4 cup (30 g) powdered sugar, sifted (for rolling)
Instructions
- Extract Citrus Oils in Sugar: In a large mixing bowl, combine the granulated sugar, fresh lemon zest, and fresh orange zest. Rub them together thoroughly with your fingertips or a silicone spatula for 1–2 minutes so the sugar absorbs all the fragrant essential citrus oils.
- Whip Egg White and Lemon Juice: In a separate small bowl, whisk the room-temperature egg white and 1 tablespoon of freshly squeezed lemon juice together briefly until light and frothy.
- Combine Frothy Egg White with Citrus Sugar: Pour the frothy egg white mixture into the citrus-infused sugar and stir well until fully integrated into a smooth, fragrant citrus base.
- Add Almond Flour and Form Paste: Gradually add the blanched almond flour in batches, kneading the mixture with your hands or a sturdy spatula until it forms a malleable, soft, slightly sticky dough that resembles fresh marzipan paste.
- Cover and Chill for 40 Minutes: Cover the bowl tightly with plastic wrap and chill the almond dough in the refrigerator for 40 minutes so the natural almond fats firm up. Meanwhile, preheat your oven to 350°F (180°C) and line a large baking sheet with parchment paper.
- Portion and Roll in Powdered Sugar: Quickly pinch off small portions of the chilled almond dough, about 20g or 1 tablespoon each, and roll them into smooth balls between your palms. Roll each almond dough ball generously in the sifted powdered sugar until completely coated in a thick white layer.
- Pinch and Arrange on Sheet: Place the sugar-coated almond dough balls on the prepared baking sheet. Lightly press each ball with your thumb and forefinger to create a gentle hollow or pinched center, forming the traditional Sicilian pizzicotti shape.
- Bake Until Set and Cracked: Bake at 350°F (180°C) for approximately 12 minutes, or until the bottom edges are set and the tops develop beautiful cracks in the powdered sugar coating while the centers remain soft and pale.
- Cool Completely on Sheet: Leave the cookies to cool completely directly on the baking sheet before handling. These delicate almond cookies are fragile while warm and firm up into their signature tender, chewy texture as they cool.
Notes
- Do Not Skip the 40-Minute Chill: Chilling the dough for the full 40 minutes is crucial! It firms up the natural almond oils, making the sticky almond paste much easier to handle and shape into clean, round balls.
- Make Your Own Almond Flour: If you don’t have store-bought blanched almond flour, you can easily make your own by finely grinding whole blanched almonds in a food processor with a tablespoon of the recipe’s sugar until powdery.
- Use Fresh Organic Citrus: Since citrus zest is a main flavor component, choose fresh organic lemons and oranges free from wax coatings for the purest Mediterranean flavor.
