Description

This Shaved Fennel Citrus Salad is a bright, crisp, and refreshing combination of paper-thin fennel, juicy oranges, ruby red grapefruit, creamy goat cheese, toasted nuts, and a fresh citrus champagne vinaigrette.


Ingredients

  • 2 medium fennel bulbs, stems trimmed, fronds reserved for garnish
  • 2 Cara Cara or Navel oranges, segmented (supremed)
  • 1 Ruby Red grapefruit, segmented
  • 1/3 cup (40g) crumbled goat cheese or feta
  • 1/4 cup (30g) toasted sliced almonds or pine nuts
  • 1/4 cup fresh mint leaves or parsley, torn
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp fresh orange juice, reserved from segmenting
  • 1 tbsp champagne vinegar or white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1/4 tsp fine sea salt
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Trim the stalk and root end from the fennel bulbs, reserving the bright green fronds for garnish.
  2. Using a mandoline or sharp chef’s knife, shave the fennel paper-thin.
  3. Submerge the shaved fennel slices in a bowl of ice water for 10 minutes to maximize crunch.
  4. Drain the fennel thoroughly and pat dry.
  5. Slice off the top and bottom of the oranges and grapefruit.
  6. Stand each fruit upright and cut away the peel and white pith following the curve of the fruit.
  7. Carefully slice between the membranes to release the individual citrus segments over a bowl, reserving the fresh juice.
  8. In a small bowl, whisk together the extra-virgin olive oil, reserved orange juice, champagne vinegar, Dijon mustard, honey, sea salt, and black pepper until emulsified.
  9. Arrange the dried shaved fennel and citrus segments on a serving platter or bowl.
  10. Drizzle the citrus vinaigrette over the fennel and citrus.
  11. Scatter the crumbled goat cheese or feta, toasted almonds or pine nuts, torn mint or parsley, and reserved fennel fronds over the salad.
  12. Serve immediately.

Notes

Soaking the shaved fennel in ice water helps maximize its crisp texture. Segment the citrus over a bowl to catch the fresh juice for the vinaigrette.
