Description

Seitan, often called ‘wheat meat,’ is made from a few simple ingredients that create a high-protein, chewy, and satisfying meat substitute perfect for vegetarian and vegan dishes.

Ingredients

  • Wheat gluten (vital wheat gluten flour)
  • Water or broth
  • Soy sauce or tamari (for saltiness)
  • Garlic and onion powder
  • Paprika or nutritional yeast (for flavor)

Instructions

  1. Step 1 – Mix the Dry Ingredients: In a large bowl, combine wheat gluten, garlic powder, onion powder, and paprika or nutritional yeast.
  2. Step 2 – Add Liquid: Stir in water or broth and soy sauce until a dough forms.
  3. Step 3 – Knead the Dough: Knead for a few minutes to develop the gluten — this creates the chewy, meaty texture.
  4. Step 4 – Cook the Seitan: Simmer or steam the dough for 30–45 minutes until firm and cooked through.
  5. Step 5 – Use as Desired: Slice, shred, or cube for stir-fries, sandwiches, or stews.

Notes

Simmering in flavorful broth enhances the taste. For firmer texture, steam instead of boil. You can also season the liquid with soy sauce, herbs, or miso for depth.
