- 3 medium potatoes, peeled and shredded
- 1 tablespoon flour
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil or butter
- 4 large eggs
- 2 tablespoons milk or cream
- 1 tablespoon butter
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup diced cooked ham
- 2 tablespoons grated cheddar or Swiss cheese
- 1 tablespoon chopped chives (optional for garnish)
Instructions
- Peel and grate the potatoes. Squeeze out moisture, then mix with flour, salt, pepper, and olive oil.
- Grease a muffin tin and press mixture into cups to form nests. Bake at 400°F (200°C) for 15–18 minutes until golden.
- Whisk eggs, milk, salt, and pepper. Melt butter in a pan, add eggs, and cook gently, stirring until softly scrambled.
- Stir in diced ham and cheese while eggs are warm.
- Spoon the egg mixture into the baked potato nests. Garnish with chives or extra cheese if desired.
Notes
Make sure to squeeze the potatoes well to achieve crispy nests. Serve warm for best texture.
