Description

Flaky, buttery savory biscuits packed with sharp cheese, smoky ham, and fresh chives. Perfect as an appetizer, brunch treat, or savory snack.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp garlic powder
  • ½ tsp fine sea salt
  • ¾ cup (170g) unsalted butter, ice-cold and cubed
  • 1 cup sharp white Cheddar or Gruyère cheese, finely shredded
  • â…” cup smoked ham or pancetta, finely diced and pan-seared
  • ½ cup heavy cream or whole milk, chilled
  • 1 large egg, beaten
  • 2 tbsp fresh chives, finely minced

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, garlic powder, and salt in a large bowl.
  3. Cut the cold butter into the flour mixture until coarse crumbs form.
  4. Pour in the chilled cream and stir gently until a shaggy dough forms.
  5. Turn dough onto a lightly floured surface and pat into a rectangle.
  6. Scatter half of the ham and cheese over the dough, fold, flatten, then repeat with remaining ham and cheese.
  7. Roll dough to about 1 inch thick.
  8. Cut rounds using a 2-inch biscuit cutter and place on the prepared baking sheet.
  9. Brush tops generously with beaten egg wash.
  10. Bake for 15 to 18 minutes until risen and golden brown.
  11. Remove from oven and immediately sprinkle with fresh chives.
  12. Serve warm and enjoy.

Notes

Keep the butter cold for the flakiest layers. Avoid overworking the dough to ensure tender biscuits.
