Description

Crisp apple slices topped with creamy date caramel, toasted coconut, and melted dark chocolate for a delicious Girl Scout-inspired treat.


Ingredients

  • 2 large crisp apples (Honeycrisp, Granny Smith, or Pink Lady), cored and sliced into 1/4-inch wedges
  • 1 tbsp fresh lemon juice mixed with 1 cup cold water
  • 1 cup (approx. 10–12) Medjool dates, pitted and soaked in warm water for 10 minutes
  • 2 tbsp warm water or almond milk
  • 1 tbsp creamy almond butter or cashew butter
  • 1 tsp pure vanilla extract
  • 1 pinch fine sea salt
  • ½ cup unsweetened shredded coconut, toasted golden brown
  • â…“ cup dark chocolate chips (70%+ cacao), melted with ½ tsp coconut oil

Instructions

  1. In a dry skillet over medium-low heat, toss the shredded coconut for 3–4 minutes until lightly golden and fragrant.
  2. Transfer the toasted coconut to a bowl immediately so it does not burn.
  3. Combine 1 tbsp lemon juice with 1 cup cold water in a wide bowl.
  4. Slice the apples into uniform 1/4-inch wedges.
  5. Dip the apple slices into the lemon water bath for 30 seconds.
  6. Pat the apple slices thoroughly dry with paper towels so the toppings adhere properly.
  7. Drain the soaked Medjool dates and place them in a food processor or blender.
  8. Add the warm water, almond butter, vanilla extract, and sea salt.
  9. Blend on high until completely smooth and caramel-like.
  10. Arrange the dry apple slices in a single layer on a platter or parchment-lined tray.
  11. Drizzle or pipe the creamy date caramel generously over the apple slices.
  12. Sprinkle the toasted coconut liberally over the caramel.
  13. Finish by drizzling the melted dark chocolate back and forth across the slices.
  14. Serve immediately.

Notes

Pat the apple slices thoroughly dry after the lemon water bath so the date caramel, coconut, and chocolate adhere properly. Transfer the toasted coconut out of the skillet immediately to prevent it from burning.
