Description

Perfectly roasted sweet potatoes glazed with maple syrup, cinnamon, and olive oil — crisp on the edges, tender inside, and bursting with warm flavor.


Ingredients

  • 2 lbs (900 g) sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 3 tbsp pure maple syrup (grade A, dark amber recommended)
  • 1 tsp cinnamon
  • ½ tsp smoked paprika (optional)
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • Fresh thyme or rosemary for garnish (optional)
  • Optional upgrade: drizzle of browned butter before serving

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash, peel, and cut sweet potatoes into even 1-inch cubes. Soak cubes in cold water for 15 minutes, then drain and pat dry.
  3. In a small bowl, whisk together olive oil, maple syrup, cinnamon, paprika, salt, and pepper.
  4. Place sweet potato cubes on the baking sheet, pour the glaze over them, and toss until evenly coated. Spread in a single layer.
  5. Roast for 25–30 minutes, flipping halfway through, until edges are golden and slightly caramelized.
  6. Remove from oven and drizzle with an extra teaspoon of maple syrup or browned butter. Garnish with fresh thyme or rosemary and serve warm.

Notes

For extra flavor, try using brown butter instead of olive oil. You can also add a pinch of cayenne for heat or top with toasted pecans for crunch. Great as a side for roasted chicken, salmon, or holiday dinners.
