Description

Rainbow Fruit Frozen Yogurt Bark is a healthy, refreshing frozen treat made with creamy Greek yogurt, naturally sweetened with honey, and topped with colorful fresh fruit. Perfect for breakfast, snacks, or a light summer dessert.


Ingredients

  • 2 cups plain or vanilla Greek yogurt (whole milk or 2% preferred)
  • 2–3 tbsp pure honey or maple syrup (omit if using sweetened vanilla yogurt)
  • 1/2 tsp pure vanilla extract
  • 1/3 cup fresh strawberries or raspberries, diced
  • 1/3 cup fresh mango or mandarin orange segments, chopped
  • 1/3 cup fresh pineapple or banana slices
  • 1/3 cup kiwi, peeled and diced
  • 1/3 cup fresh blueberries or blackberries
  • 2 tbsp chia seeds, hemp seeds, or toasted coconut flakes (optional)

Instructions

  1. In a medium bowl, whisk together the Greek yogurt, honey or maple syrup, and vanilla extract until completely smooth.
  2. Line a 9×13-inch rimmed baking sheet or baking pan with parchment paper. Spread the yogurt mixture evenly to about 1/4-inch to 1/2-inch thickness.
  3. Arrange the strawberries, mango, pineapple, kiwi, and blueberries in colorful stripes or a mosaic pattern over the yogurt. Sprinkle with chia seeds, hemp seeds, or toasted coconut flakes if desired.
  4. Freeze the bark for 3 to 4 hours or until completely firm. Remove from the freezer, lift out using the parchment paper, and break into irregular pieces. Serve immediately or store in an airtight freezer-safe container.

Notes

Use fresh, ripe fruit for the brightest flavor and color. For cleaner pieces, let the bark sit at room temperature for 2 to 3 minutes before breaking. Store frozen for up to 2 months in an airtight container.
